Oyster Blade  (Flat Iron Steak)

Oyster Blade also called Flat Iron steak comes from the shoulderarea of a cow. It is located to the heart of the shoulder called chuck. Flatiron steaks usually have a significant amount of marbling. This has the fasciadividing the infraspinatus within it, has increasingly been cut as two flattersteaks, each corresponding to one muscle, with the tough fascia removed. Its cutof beef is also famous for its fall apart texture and deep flavor.

Flat Iron Steak comes from a completely different area on the cowas flank steak (which comes from the underside abdominal area). Flat iron steakhas significant marbling that gives it rich flavor. It comes in approximately1-1/2 pound pieces shaped in a flat rectangular shape about five by fifteeninches which I think is perfect for serving four people. It takes well tomarinating and it cooks fairly evenly.
