Iberian "Cebo" Shoulder Hamcomes from the front legs of the Iberian pig breed. Iberian pigs roam freely inthe fields during the last stages of growth, feeding on the pastures and someacorns. This forces the animals living in freedom to move continuously, toexercise their muscles, favouring a perfect distribution of intramuscular fat.This is the most appreciated quality of the prized Iberian Shoulder Ham

Cebo Iberian Hams are selected accordingto the purity of the breed, the type of feed and qualities of each pig whichcured for a period of months (over 18 months) following regulated artisanalmethods. The cut has numerous fat veins that extend into the lean meat andthere are some white dots (tyrosine crystals) that crystallize in the musclemass, which means that the curing process has been adequate. The fat is brightand displays golden tones revealing a low melting point, characteristic of thefat of acorns.

Preparation methods: for best tasting experience, open at least 30 minutes before consuming at room temperature.
